This has always been the favourite tuna of Italians on account of the delicate taste and unmistakable quality that only masterly processing of yellowfin tuna can provide. The Rio Mare tuna processing system is very simple. The tuna is steam-cooked and then worked by hand, (just like in the old days) to guarantee thorough cleaning and maximum quality levels.
